Inspector's comments: Tomatoes cut two hours ago, have four hours for tomatoes to cool down - suggest placing tomatoes inside walk-in cooler before slicing. Tuna in large, covered bowl prepped two hours ago-suggest placing tuna packets and other ingredients inside cooler before mixing; leave uncovered after prep inside walk-in cooler. Display cooler unit iced up causing deli meat temperatures to be slightly elevated - check for proper defrost cycle. Need sanitizer test strips. Employees need hair restraints; no arm jewelry or hand jewelry.
